I haven't tried this recipe yet,but I saw it in Poh's kitchen..and it looks yummy..so if you guys had tried it,please leave comments and let me know how was it..
INGREDIENTS
- ½ Green Papaya (400g)
- 50gm birds eye (scuad) chillies
- 5cm fresh turmeric root, or 2 teaspoons of dried turmeric
- 1 ½ handfuls of dried fish, soaked to rehydrate and to reduce the salt content (available from an Asian grocer)
- 2 medium size shallot, sliced
- 2 stalks lemon grass, crushed
- 200ml thick coconut milk
- 50ml water
- 50g dried anchovies
- 1pcs dried tamarind
- Salt to taste

METHOD
- Skin the papaya and slice into thin strands and place into cold wok or pan.
- Add the lemon grass, tamarind and shallot.
- Pound or grind the birds eye chillies and turmeric into a fine paste and fold into the other ingredients.
- Add the rehydrated dried fish to the pan.
- Pound anchovies coarsely and add to pan.
- Add coconut milk and water and a little salt to taste.
- Cook until mixture reaches a thick consistency. (It's a quick cook, stirring as you go.)
- Serve with white rice.
